Benefits of Ceylon Cinnamon
The cinnamon spice comes from the inner bark, also known as the cambium layer of the tree. Ceylon cinnamon consists of thinner strips of bark layered into quills. It’s more delicate in texture, flavor, and scent than Cassia. It’s also more expensive and harder to source.
***Ceylon cinnamon is preferred over Cassia cinnamon because it does not contain high levels of coumarin which can be toxic.

How to use Ceylon cinnamon:
- You can also add a 1-2 Tablespoon to a mason jar, fill with cool spring water and allow to steep overnight. This cinnamon water can be consumed throughout the day.
- If you would like to drink as a tea, simmer 1 tsp per cup with hot water and allow to steep until desired flavor.
